The bit about liquid nitrogen was an inevitable consequence of having 4 physicists in the wedding party (bride, groom, brother, and sister). Rum Truffles 1/4 Cup whipping cream 2 tbsp butter 6oz chocolate 1/4 tsp vanilla loads o' rum (3tbsp?) I might have put some egg yolks in too, maybe 3 of them. Coffee Truffles 2 tbsp whipping cream 1 tbsp Tia Maria 1/4 tsp vanilla 1 yolk 6 oz white chocolate 2 tsp instant coffee to prepare: simmer the cream (also butter in the dark chocolate ones). If you put butter in the white ones, they will be very soft even if frozen in your freezer for a long time, but if you freeze them very solid (as in liquid nitrogen) and dip them in melted dark chocolate, they might work even with butter. Butterless, they are pose no problem. Reduce heat to low and stir in the vanilla and yolk(s). Add the chocolate and stir till smooth. stir in the liquer and coffee (or rum).Freeze till firm and form into balls. Roll the truffles in a 1:1 mixture of cocoa and sugar. Freeze up to 1 month.
