3 A. Internally, we have members of staff working on the
4 dining area.

7 A. The customer area where customers would be seated.
8 They would help the customers to clear up their rubbish
9 from their trays or else the customer has the option of
10 putting the rubbish in the bin themselves. When the bins
11 are removed when they are full up they are taken down to a
12 trash room which contains a compacting machine which will
13 take an average bin bag and compact it. Probably on
14 average, five to six bags could be compacted into one large
15 bag which would be sealed.

17 Q. What happens to those large bags of compacted rubbish?
18 A. Well, they are kept in a separate room, the trash room,
19 and we have a rubbish collection once a day.

21 Q. Rubbish collection once a day. Where is the rubbish
22 collected from? Do you put it out in the street or do they
23 come to the back door or what happens?
24 A. Yes, we are allowed up to one hour. We are allowed a
25 one hour period for our rubbish to be outside the store
26 before it is collected. So, generally, we put it out half
27 an hour before the rubbish collection.

29 Q. What time of the day is the rubbish collection?
30 A. It is 8.30 at night, 8.30 p.m..

33 A. Yes, it is

36 collected; is that right? Is that what you said?
37 A. Yes, at maximum one hour.

56 A. We have an option to use the Local Authority but we did
57 try them for two months, but we found their service was not
