     1   Q.   That would be the temperature of the meat packs, would it?
     2        A.  I just said I do not know.  This is not one of my

     8   Q.   If it was referring to the meat packs, would it concern
     9        you, those temperatures there?  Would that be something
    10        that McKey's would investigate and ask them to improve on?
    11        A.  If this is a Jarret document, which I think it is --
    12        I am sure it is.

    15        A.  Yes, it would be a matter of the temperature control on
    16        the lorry and the temperature of the meat when it arrived
    17        at McKey's.  Those are the things which would concern me.

    19   Q.   Right.  So, if the meat started out on its journey from
    20        Jarrets at eight degrees, by the time it got to McKey's it
    21        was four, you would be happy with that?
    22        A.  My people can only check what they have.

    24   Q.   But would you actually be happy with it?
    25        A.  No, I do not think I would be happy with it.  It
    26        depends what the bacteriological total count was of the
    27        meat when it came in that would be my critical point.

    29   Q.   So that is not something that you make checks on at all?
    30        A.  We check the Cambridge recorders on the trucks and we
    31        check the temperature of the meat when it arrives.  We
    32        cannot be everywhere.

    34   Q.   You could make a specification about it, though, could you
    35        not, for example?
    36        A.  What do you mean?

    38   Q.   If you specified to your suppliers that meat packs must be
    39        below a certain temperature at the start of the journey?
    40        A.  I think that is true.  You could make a specification
    41        about it.

    43   Q.   That is not something you have ever considered doing then?
    44        A.  No, because we have always checked it when it arrives.

    46   Q.   Right.  But you could check it when it is leaving when your
    47        inspectors make their random checks twice a year?
    48        A.  Well, if they happened to be there when there was a
    49        load being loaded, yes, they would automatically check the
    50        cleanliness of the truck and all that sort of thing, and 
    51        the temperature of the truck.

    54        A.  They would do if they were there.
