Day 088 - 13 Feb 95 - Page 20
never had a rejection from McKey's on temperature.

Q. On temperature?
A. Yes.

Q. Those big lorries, yes?
A. Yes.

Q. Do you do all your own deliveries?
A. In this country, yes, abroad, no. That is why
I hesitate, sir.

Q. Let us stick with this country for the moment. How much,
in passing, of a percentage of your product is exported?
A. May I just go back to the previous question to get it
absolutely correct? We deliver all fresh meat. If we ever
freeze meat and it is an outside cold store, we will not
deliver that. That will be by outside contract. I just
wanted to keep it correct.

Q. What proportion of your product is exported?
A. About -- it varies according to exchange rates, sir,
but it can vary from year to year from 15 to 20 per cent.

Q. These big lorries at the back here, you told us already
they are chilled?
A. Yes.

Q. Are they regularly maintained?
A. Yes.

Q. Are checks made to see that their temperature control is
working properly?
A. Yes.

Q. If you had a lorry whose thermostat, or whatever it was,
broke, bust, en route and the meat was soggy on arrival, if
I may put it like that, too warm, what would you expect to
happen to it?
A. It would be rejected, sir.

Q. In what size of containers is the meat transported to
McKey's?
A. McKey is quite unique.

Q. Yes.
A. They insist on that we should (which is a bit of a
pain) that we should deliver to them in octabins or I think
other people call them combo containers.

Q. Which is an octagonal drum?
A. A cardboard bin which then has a polythene liner inside
before we put any meat, but I must compliment, I think that
is probably the most hygienic method of transport of meat
that there is.

Q. Can you find bits of meat from different animals in the
same octabin?
A. Of course, yes.
