Its not surprising that quality help is difficult to find when the earnings are so low, the hours so long, the kitchens so unsafe and the company so dismissive of criticism....this applies equally well across the board in large companies where the earnings are higher e.g. major accounting/audit/consultancy firms. The high wages do not reflect the actual time spent working (often 12 hours a day, six days a week) or the uncertainty of the market, where you are only a HUMAN RESOURCE (a number) who may be dispensed with at a partners whim. The exploitation of workers is not limited to menial, low-paid jobs, but is true whenever a large corporation is concerned. These companies did not make their huge profits by giving a shit!
