Banana Plantation, Santiago de Cuba

This is a banana plantation located on a farm outside of Santiago de Cuba. Here, it is being tended by volunteer workers from an Australia/New Zealand work contingent visiting Cuba.

When ripe, the bananas from this planation are still very small – but they are very sweet and delicious. However, bananas aren't always eaten when they are ripe. Green bananas are often boiled or fried and, because they are full of starch (the substance which breaks down into sugars as the bananas ripen) they taste a lot like cooked potatoes.
