Chocolate Macaroon Bars
Base:
- 4 squares unsweetened chocolate
- 1 c. shortening
- 2 c. sugar
- 1/4 tsp. salt
- 1 tsp. vanilla
- 3 eggs
- 1 c. flour
Filling:
- 3 c. angel flake coconut
- 1 can sweetened condensed milk
- 3/4 tsp. almond extract
Topping:
- 1 c. chocolate chips
- 3/4 c. sliced almonds
BASE:
Melt chocolate & shortening together in large saucepan over low
heat, stirring until smooth. Remove from heat & stir in sugar, salt,
vanilla & eggs. Mix well. Add flour, stirring until smooth. Spread half
of the batter in a greased 9" x 13" cake pan.
FILLING:
Mix the filling ingredients together thoroughly & spread as
evenly as you can over the chocolate batter. Carefully cover with
remaining chocolate batter. Don't worry if it's clumpy! It will all mix
together when baking.
Bake at 350 degrees for 35-40 minutes. Remove from the oven & immediately
sprinkle with chocolate chips. Let stand about 1 minute to soften & spread
evenly all over. Sprinkle with almonds, pressing in lightly. Chill to set
chocolate before cutting.
Cut into squares & do your own variation of the Happy Dance while eating.
