What happens when you need to access the data faster than the network
can deliver it? There's no point in having a RTOS when the network is
delivering the multimedia data slower than needed.

And what happens when you're using one OS and the data you need is on
the other drive? If you're going to use caddies, fit a permanent, larger
drive for data and use small drives in the caddies for the OS's only.

It's not only useful for A/V files. As my A4000 is currently SCSI-less,
I use MakeCD to create an image file over the network. This is on a
spare VFAT partition, accessible from both Linux and Windows, so I can
use either to burn it to CD.
