How do you plan to get them printed?
Presumably when you say "booklet" you are thinking of A5 size pages on
A4 (landscape) paper. That means the pages have to be arranged in the
right order - the first side carries the front and back covers, the next
page 2 and last-but-one, and so on.
Pagestream 4 will re-arrange the pages for you in the correct order, and
can print the odd and even sides of the A4 sheets separately.
Pagestream 4 would be the best, but a (secondhand) copy of ProPage would
do at a pinch, especially if printing to PostScript.
