You definitely have enough power to do this. As someone else mentioned,
there may be copyright issues unless it's your own. Neil mentioned that
most Amiga sound cards are 8-bit, but it's not hard at all to find a
16-bit card. If you don't want to do full-duplex recording [that is,
recording and playing back at the same time], the Concierto IV is a
good, inexpensive option, provided you have a Picasso IV card.
Personally, I've had great experiences recording vinyl with the Sunrize
AD516 card with Studio 16 software, then using "JoinAIFF" to make the
recordings "universal."

The Amiga version of LAME (available on Aminet) will do the MP3 for
you, but with an 060 expect the encoding process to take a long
time...I have a fully-loaded A4000/CSMKIII 060/50 w/128MB accelerator
RAM, and it takes me about half an hour to encode three minutes at
192kbps. (Took about as long when I was using the GVP4060.) You won't
get a good MP3 encoding speed without a PPC. And although 128kbps is
"officially" considered "CD-quality," you're better off with 192kbps or
higher, as there are some people who can tell the difference in
quality. [I can't until it gets below 128, personally...]

And if you want to put effects or noise filtering into place, I've read
rave reviews on those capabilities in SoundProbe [which I can't seem to
run without random crashes -- hints, anybody?] and in Samplitude Opus,
but if you just want to do simple recording, save your cash.
