Well, I just went and loaded up SimCity 2000 on my 1200 and had a look at the
various files in its dir.
There's this one that for some strange reason caught my eye - called ReadMe. I
can't imagine why it might have been important. And I can only imagine that it
was created during the installation because I certainly would not have made it.
So I double-clicked on it and lo - there was a very helpful ReadMe text file.
And in the first paragraph, it talked about screen resolutions.
Basically - when you first install SimCity2k, it asks for a screen mode and then
uses that. But, if at a later date, you want to change the screen mode, just
hold down any of the Shift keys when double-clicking on the SimCity2k icon to
load, and a screen mode requestor will pop up and allow you to choose from the
available modes.

Handy eh?

Aren't these ReadMe files that are included with the installation and put into
the main game dir wonderful? ;-)

Good luck (although you won't be needing any)
