You've obviously never tinkered with your boot partition only to find that it
doesn't boot properly afterwards. Having other boot partitions allows you to
boot from them to undo any damage you may have caused. On my system, I have my
main boot partition on my SCSI drive, with a backup of this on a 2.5" IDE
drive, along with another partition with OS3.5 on it.
It's called hedging your bets ;-)
