The best way to win at fights I found was as follows:
Sword & sabre: Everytime you score a hit (you see blood) take a step forward and do a sideways swing right away. If you time this right, you can keep hitting any enemy you're facing, and they'll die without being able to even touch you!
Gun: This is easy to use, but some monsters are not affected by bullets.
