CARROT OR ZUCCHINI CAKE RECIPE

Ingredients:
1 c. sugar
1 1\2 C. flour
2 t. baking powder
1 t. cinnamon
1\2 c. oil
1\4 t. salt
2 eggs
1 c. carrots or zucchini
1\2 c. nuts


Procedure:
Mix sugar and oil. Add sifted dry ingredients and carrots
or zucchini. Add eggs, one at a time, beating well. Add
nuts, blend. Pour into greased 8 1\2 x 41\2 x 2 1\2 loaf pan.
Bake 55-60 min.
