- holidays. I found the following in an LA newspaper artical by Lisa Riddle.

- Sugar free Pecan pie

- 1 package sugar-free vanilla pudding (not instant)
- two-third cup granular fructose
- one-third cup water
- three-fourths cup evaporated skim milk
- 1 whole egg
- 2 egg whites
- one-fourth cup chopped pecans
- one-half cup Grape Nuts cereal
- 1 unbaked 9-inch pie shell

- Pre-heat oven to 375. Combine water and fructose and simmer over low heat
- five minutes, then cool. Mix dry pudding in fructose mixture. Add milk and
- egg and blend well. Pour in pie shell and sprinkle pecans and Grape Nuts on
- top. Bake at 375 for 40 minutes, until top is firm. Cool three hours before
- slicing. Exchanges: 1 and one-half starch, 1 fruit, 1 fat (220 calories per
- serving).
