- Here's an easy tortellini salad:

- 1/2 lb. fresh tortellini
- 1/2 lb. broccoli
- 1 small head of cauliflower
- 2 tomatoes
- 1 red pepper
- 1 green pepper
- 1 small can (6-8 oz.) black olives
- 8 oz. Italian or Parmesan salad dressing, or more to taste
- black pepper, to taste

- Cook the tortellini if it isn't precooked. Rinse in cold water.

- Wash the fresh vegetables and chop them into bite-sized pieces. Remove
- seeds from the peppers but not from the tomatoes. I don't use the stems of
- the broccoli or the cauliflower.

- Drain the black olives. Combine the tortellini, vegetables and olives.
- Pour salad dressing over everything and toss. Season to taste with black
- pepper. Chill or serve at once.

- Serves 2-3. Doesn't last more than a day or so.
