DAMPER
DAMPER is best served hot, straight from the oven, with
butter. Cooked damper can be frozen for up to 2 months. Reheat
frozen damper, covered, in a moderate oven (350 to 400 centigrade)
for 30 minutes, or until hot. This recipe is unsuitable for
microwave cooking. Damper was originally cooked in a camp oven,
(a very thick cast iron pot), over an open fire, or fire place,
or cooked in a hole dug in the coals of a campfire, covered with
more coals and later dug up. The dirt and charcoal was brushed of
and then eaten, the charcoal probably gave it that extra flavour.
But since we don't have either of these we will cook ours in a
normal electric oven.
Ingredients.
3 cups of self-raising flour.
45 grams of butter, not margarine.
1/2 a cup of milk.
3/4 of a cup of water.
extra milk for glazing.
How to do it.
Sift flour into a bowl, rub in butter. Make a well in the
centre, add combined milk and water all at once, mix lightly with
a fork. Knead dough on lightly floured surface until smooth,
remember the more you knead the damper the lighter it will be when
cooked. Place dough onto a greased oven tray, pat into a circle
16cm in diameter and about 4 cm thick.
Using a sharp knife, cut a cross on the top about 1 cm deep.
Glaze with a little extra milk. Bake in moderate oven for about
40 minutes, or until golden brown and cooked through. Easy hey,
enjoy. How about something for desert, well read on mate.

PAVLOVA
How to eat it, after it is cooked and let cooled, cover with
whipped cream and fruit or fruit salad and go for it.
Ingredients
4 egg whites,
1 and 1/4 cups caster sugar,
1 tablespoon cornflour, that's the big spoon by the way,
2 teaspoons vinegar, that's the small spoon,
1/4 teaspoon vanilla essence, again the small spoon,
Filling
300 ml carton cream, fresh is best,
and heaps of fruit salad.
How to do it
Whisk egg whites until stiff. Add sugar, a tablespoon at a
time, mixing until meringue is very stiff. Whisk in cornflour,
vinegar and vanilla essence. Pile meringue onto baking tray lined
with greaseproof paper, shape into a circle, and then hollow out
centre slightly and bake in preheated oven (300 f) for 1 and 1/2
hours. Cool, then remove paper and fill with whipped cream and
fruit or fruit salad. Then what do you do, eat it before the rest
of the family do. Enjoy.
