1 lb good ground beef 1 medium potato, diced
1 onion, diced 6 to 8 corn tortilla shells
2 garlic cloves crushed Shredded Longhorn yellow cheese
salt & pepper Diced tomato (as needed)
1 tsp cumin powder Shredded lettuce "
Saute onion and garlic slightly. Add hamburg, (salt and pepper to
taste) & fry until brown. Cover meat with water. Add cumin and finely
diced potato. Stir together well. Cook slowly or until most of the
water evaporates. Steam each tortilla shell individually for moments
until soft. (Use vegetable steamer in a saucepan with boiling water
for this operation.) Place softened shell on plate and fill with meat
mixture. Roll the tortilla placing the fold on the bottom. Place 2,
3 or 4 tortillas on each plate as required. Garnish with shredded
Longhorn cheese, chopped tomatoes and shredded lettuce. Can be
garnished with a 'hot sauce' if desired.
