     1        not getting enough energy certainly for certain sections
              of the population, so let us not lose sight of the fact

     3   MS. STEEL:  What I am trying to get out ------
 
     4   MR. JUSTICE BELL:  No, you must let him finish and then you ask
              your next question.
     5        A.  Nutrition is a complicated business.  It is not just a
              matter of making sure that we do not eat too much
     6        saturated fat; we have to make sure that we have all the
              requirements for all these other things.  You know, at a
     7        guess, we have at least 40 or 50 different nutrients for
              which the requirements must be fulfilled.

              Now, the more we narrow down the food we eat to two,
     9        three, or four, five foods, then the greater the chances
              are that we are not going to hit the requirements we need
    10        in order to function effectively.  So, basically, what
              I am saying is that it is important to eat a range of
    11        foods, you know, milk, meat, butter, fresh fruit,
              vegetables, rice, bread, all the rest of it.  It is a
    12        matter of having a proper balance in the diet.
 
    13   Q.   What I am trying to get at is when you are talking about
              the type of products supplied by McDonald's playing a
    14        critical part in the diet, you are talking about the
              basic, initial ingredients, the potatoes.  You are not
    15        talking about the added fat, the sugar and the salt?
              A.  No.  I am talking about the actual food that is bought
    16        in McDonald's, the composition of which is reported in the
              literature which is freely available for anybody to pick
    17        up in a restaurant and read and study for themselves and
              use to construct a healthy diet themselves.

         Q.   What kind of critical part does the added fat, sodium and
    19        salt play in the diet -- sorry, sodium and sugar?
              A.  Say that again because I do not quite understand what
    20        you are getting at.
 
    21   Q.   What kind of critical part does the added fat, sodium and
              sugar play in the diet?
    22        A.  There is nothing particularly special about that.  It
              is just another component in the diet.  They make a
    23        contribution to the final values that one would calculate
              if one was interested in doing that.

              I mean, I cannot understand why you think there is any
    25        difference between the fact that some fat is added during
              manufacturing and the fact that there is some fat present 
    26        in meat, the fact that there is fat present in milk.  I 
              mean, what is the difference?  You tell me.  I do not 
    27        understand the difference.
 
    28   Q.   Let us take potatoes:  What does McDonald's do to
              potatoes?
    29        A.  It makes french fries out of them.
 
    30   Q.   How does it do that?
              A.  It puts them in some frying oil.
