Q. You have told us that you have written scientific articles;
what sort of topics have you covered in those articles?
A. I have written articles about food safety in terms of
microbiology. I have written articles covering five animal
species from pork to beef, to chicken, turkey and quail in
areas of processing technology.

Q. I should have asked you this before, when you do a course
at an American university, let us say it is a degree course
or a doctorate, does it get a mark at the end or do you
just get a pass or a fail?
A. We get a grade.

Q. A grade?
A. Yes. On a scale, let us say, from one to 10 where 10
is the highest and or 100, if you will, and one is a fail.

Q. Does it embarrass you if I ask you what grade you got for
your MSc at Texas A & M?
A. No.

Q. Will you tell us then, please?
A. Well, in my last two years I have finished with what
you would say a perfect score of 10.

Q. Was the PhD marked as well?
A. Yes, it was.

Q. What score did you achieve in that?
A. The same -- I am sorry, I misunderstood your question.
For the MS I finished with close to 90.

Q. Sorry.
A. Around 90.

Q. For the PhD, 100?
A. That is the last two years it was a 10.

Q. Leaving aside for a moment your position as a McDonald's
employee, try to imagine that this is an audience of, what
shall I say, international experts in food safety and also
in animal husbandry, would you feel qualified to speak
about those topics?
A. Yes, I do. Yes, I do.

Q. Can I ask you next, please, about the areas of
responsibility that you have within the McDonald's
organisation?
A. Yes.

Q. Can I take it in stages, please? First of all, you have
told us that you travel quite extensively?
A. Yes, I do.

Q. I think McDonald's has or had until recently restaurants in
72 countries of the world?
A. 74 now.

Q. Right, I am out of date; and, no doubt, I will be out of
