Day 074 - 16 Jan 95 - Page 04

£900,000 a year, I think you said; is that right?
       A. Yes.

  Q. Or, at any rate, in December it was?
       A. Yes, it was, yes, sir, for the last year.

  Q. Where in Barnet is your restaurant situated?
       A. It is on the Barnet High Street.

  Q. Is that a busy shopping area?
       A. It is.

  Q. Are there any other fastfood outlets in the Barnet High
       Street?
       A. Yes, there are. There is a Kentucky Fried Chicken, a
Pizza Hut. There are other small restaurants but a bigger
chain-wise, yes, KFC and Pizza Hut.

  Q. What proportion, roughly speaking, of your custom at the
       Barnet restaurant is take-away?
       A. Take-away is around -- it varies because if it rains
there is a variation of percentages but, roughly, it is
around 45 per cent, I would say, but again it depends upon
the weather. If it is very cold people prefer to eat
inside and if there are children, then it will vary
altogether, but not a great degree, maybe five, 10
per cent, five to 10 per cent, plus or minus.

  Q. Do you sell the same sorts of items as are to be found at
company owned restaurants such as Kings Road?
       A. Yes, sir, I do.

  Q. So your take-away customer will have, perhaps, a clamshell,
a cup with a drink in it, a lid and a straw, a napkin and
perhaps a carton of fries, something like that?
       A. Yes, exactly.

  Q. All put into a carry-out bag?
       A. Yes.

  Q. So, do you have a potential environment/index.html">litter problem in Barnet?
       A. No, sir, I do not.

  Q. A potential one?
       A. Potential, yes, that could be but -----

  Q. How do you deal with environment/index.html">litter in Barnet?
       A. Litter, we do every half an hour, like there is on
observation check list, dining area check list. There is
one of the questions where we mark for the dining area
host, hostesses or the crew member or the shift manager, if
a high level manager is doing that observation check list,
that whether environment/index.html">litter patrol had been done in half an hour,
       every 30 minutes or not.

MR. JUSTICE BELL: Try to go a little more slowly, will you,
please, Mr. Siddique, because we have a contemporaneous
transcript being taken down. Miss foot is doing very well
but the faster you go, the more strain it is.
