    12          At tab 7 you will find a statement by Stacey Stump.  You
    13        should find behind that a copy of the observation check
    14        list?
    15        A.  Yes, it is at the No. 14, sir.

    17   Q.   No. 14, says:  "Trash walk to be carried out at least every
    18        30 minutes following a trash walk map".
    19        A.  Yes, sir.

    21   Q.   You have been working for McDonald's as a licensee and
    22        manager in two different locations and, I think you said,
    23        as assistant or trainee manager before that -- was it
    24        Oxford Street?
    25        A.  Yes, sir, and otherwise I have worked in Golders Green,
    26        in Midlands.

    28   Q.   How far back in time, leaving the time, perhaps starting in
    29        1978 when you were a crew member, you see that observation
    30        check list and that is dated October 1993, as far as you
    31        can remember (and you do not have to be confident of this
    32        but tell us as far as you can remember), how long has that
    33        provision about "a trash walk to be carried out at least
    34        every 30 minutes following a trash walk map" been in
    35        existence?
    36        A.  I think, as far as I remember, when I joined Golders
    37        Green in 1978, at that time we used to carry out trash
    38        walks exactly the same way we used to, I remember, wash the
    39        pavement outside, scrub, that used to be the first
    40        activity.  And I know Paul Preston, he used to come in and
    41        he used to be very happy if he sees, so that was always
    42        religiously, that has been followed through up till today.

    44   Q.   Was there an observation check list like that when you were
    45        manager of Kensington High Street?
    46        A.  Yes, sir.

    48   Q.   Were the trash walks carried out in accordance with that
    49        provision?
    50        A.  Yes, sir.  We take a great care when we -- because we 
    51        know that there is a certain percentage of people who 
    52        take-away, so I think it is in McDonald's, the way it 
    53        educates us from day 1, the environment, and especially in
    54        the community, how to live in the community; it has been
    55        taught very religiously and that is the top priority.

    57   Q.   Was it part of your training?
    58        A.  Yes, sir, it is.  To me, it is as important as taking
    59        an oath on Koran.
