Day 074 - 16 Jan 95 - Page 05
MR. RAMPTON: There is a magic screen on which appear the words
that you speak as you speak them, so it is necessary to go
a little slowly so that the words can be recorded.

In those shelves behind you, you will find a yellow file, a
blue file with a yellow spine on it, the large Roman III on
it Recycling and Waste. I think at tab 5 -----

MR. JUSTICE BELL: It is tab 7 if it is Mr. Stump. 7

MR. RAMPTON: I am grateful to your Lordship. (To the witness):
At tab 7 you will find a statement by Stacey Stump. You
should find behind that a copy of the observation check
list?
A. Yes, it is at the No. 14, sir.

Q. No. 14, says: "Trash walk to be carried out at least every
30 minutes following a trash walk map".
A. Yes, sir.

Q. You have been working for McDonald's as a licensee and
manager in two different locations and, I think you said,
as assistant or trainee manager before that -- was it
Oxford Street?
A. Yes, sir, and otherwise I have worked in Golders Green,
in Midlands.

Q. How far back in time, leaving the time, perhaps starting in
1978 when you were a crew member, you see that observation
check list and that is dated October 1993, as far as you
can remember (and you do not have to be confident of this
but tell us as far as you can remember), how long has that
provision about "a trash walk to be carried out at least
every 30 minutes following a trash walk map" been in
existence?
A. I think, as far as I remember, when I joined Golders
Green in 1978, at that time we used to carry out trash
walks exactly the same way we used to, I remember, wash the
pavement outside, scrub, that used to be the first
activity. And I know Paul Preston, he used to come in and
he used to be very happy if he sees, so that was always
religiously, that has been followed through up till today.

Q. Was there an observation check list like that when you were
manager of Kensington High Street?
A. Yes, sir.

Q. Were the trash walks carried out in accordance with that
provision?
A. Yes, sir. We take a great care when we -- because we
know that there is a certain percentage of people who
take-away, so I think it is in McDonald's, the way it
educates us from day 1, the environment, and especially in
the community, how to live in the community; it has been
taught very religiously and that is the top priority.

Q. Was it part of your training?
A. Yes, sir, it is. To me, it is as important as taking
an oath on Koran.
