the carcass was re-washed. If he makes a report, he makes
       a detailed report.

  Q. But your inspector is not there all the time, is he?
       A. No, he is not there all the time.

  Q. So if he is not there it may well carry on and not be
       washed off properly?
       A. Well, I cannot say that, can I? We set standards and
in any quality control inspection, and when you inspect any
supplier, you are telling that supplier what you require.
You are setting the standards, but you are not there all
the time. All this proves is that my chaps are doing their
       job.

  Q. There were problems. At the bottom of the page it says:
"This supplier will be revisited as soon as possible to
ensure that recommendations have been implemented"?
       A. Yes.

  Q. I have been through these documents and I cannot see any
documents relating to a further visit, a further
       inspection.
       A. This document that you are looking at is dated 9th June
1993. Somewhere in quality control files back at Milton
Keynes will be at least -- at least -- another four or five
       reports.

  Q. Do you personally know that further inspections ---
       A. Yes, I do.

  Q. -- to chase up this took place?
       A. Yes, I do.

  Q. Do you say you have documents relating to that?
       A. Yes, I have.

  Q. Going on to page H, can you just explain what this
       represents, this report?
       A. It is a quality control receiving report which says
that the supplier was Jarret and tells you the order
number, the weight received, the price paid per pound, the
packing date, the fact that the health certificate was
attached to or was with the consignment. It goes on to
tell you that the temperature was wo.7 degrees when the
meat arrived. Defects -- it looks like there were bone
       slivers, minor.

  Q. So if they are minor defects "would you" still accept the
       beef?
       A. Well, yes, bone slivers because they are removed in the
       process.

  Q. How many pages are there per receiving report because there
seem to be more than one, but there does not seem to be two
pages for each date, so I was trying to work that out.
       A. I think there is one.

  Q. The following page is different.
       A. Yes, but I mean that is just a different layout. That
