Day 080 - 30 Jan 95 - Page 08

accepted? Would it explicitly state if it had been
       rejected?
       A. Yes, I would think so.

  Q. You do not know?
       A. I am sure that -- I know that that would be the case
but what you cannot follow through these forms is that meat
has gone to Key Meats and from Key Meats to McKey. It has
not gone direct from -- that is bone in meat, not boneless
meat. It has gone to the boning room.

  Q. Who are Key Meats?
       A. Key Meats is a company which we have as a boning room.

MR. JUSTICE BELL: I am afraid the two of you are carrying on a
conversation to which at the moment I am not party.
       A. I beg your pardon, sir.

MS. STEEL: Am I not speaking loud enough?

MR. JUSTICE BELL: You did not on that occasion, no. The
trouble is if one of you speaks low the other one
automatically follows. Both try to remember -- I know it
is easy to forget -- to try to keep your voices up.

MS. STEEL: Who are Key Meats?
       A. Key Meats is a company which we have which bones meat.

  Q. Is that at Milton Keynes or is this a separate plant?
       A. No, it is not at Milton Keynes.

  Q. Where is that then?
       A. That is at Brackley.

  Q. But this is the form after the meat has come from the Key
       boning plant to McKey's?
       A. Yes.

  Q. If it had been rejected, it would have said so?
       A. Yes.

  Q. On page O there are various defects and there is also the
       arrival temperature of 3.9?
       A. Yes.

  Q. Is that still acceptable?
       A. Yes, anything up to four degrees.

  Q. Can you turn to page Q, please? There is an arrival
temperature, well, two arrival temperatures there of 4.1
and 4.8. This appears to have been accepted?
       A. Well, it says "unacceptable".

  MR. JUSTICE BELL:  The 3.8 and the 4.1 appear to be accepted;
4.8 is on the unacceptable line, is it not?

MS. STEEL: Why are there three temperature recordings there?
       A. Well, it might have been three separate combos.

  Q. Supposing the meat preparation was very good in all three
