     4        say that you want it then; on your arrival form, it says
     5         "health certificate"?
     6        A.  That has to come.  No meat can come in without a health
     7        certificate.

     9   Q.   So the E.coli certificate, you can take it or leave it
    10        then?
    11        A.  Yes, it is there if we want it.  You do realise there
    12        is no legal requirement to test for E.coli?

    14   Q.   So when would you require them to give you these
    15        certificates that you mention on your receive form?
    16        A.  I do not know.  The laboratory might be doing an audit
    17        on the supplier; the quality control department might have
    18        a particular wish to check in detail a supplier, they will
    19        just call for it.

    Q.   How long do they have to keep their testing results, as far
    22        as you are concerned?
    23        A.  I do not think that has ever cropped up and I do not
    24        think we have ever been asked it, and I have certainly
    25        never given a policy answer on it.

    27   Q.   What I mean is, for example, E.coli is a very serious
    28        potential disease, E.coli 157?
    29        A.  There is no point in keeping any document longer than,
    30        shall we say, six months because the meat has gone through
    31        and been eaten and gone.  I mean, you do not need to keep
    32        it any longer than six months.

    34   Q.   So you said that you ask for the E.coli certificates
    35        whenever you want to see them.  How often would you do
    36        that?  How often would you do that?
    37        A.  I just said, I do not know.  It depends what
    38        the quality control department want or whether there is an
    39        audit going on.

    Q.   Yes, but when you do an audit do you ask for the previous
    42        six months certificate so you can see that they have been
    43        doing it regularly?
    44        A.  Yes, I would say so, yes.

    47        A.  Everybody gets two audits a year, two inspections a
    48        year.

    50   Q.   So, in fact, you would see at one stage or other all their 
    51        certificates for E.coli testing?
