     5        A.  I have been to Midland Meat Packers.

     7   Q.   Midland Meat Packers.  Is that the only one?
     8        A.  It is the only one I have been to.

    10   Q.   How many times have you been there?
    11        A.  During my time, I would say three times.

    13   Q.   What has been your purpose of visiting that slaughterhouse?
    14        A.  Purely for my own information, really, and benefit.

    16   Q.   In terms of what, though?
    17        A.  In terms of understanding more about the process and
    18        observing exactly what happens.

    20   Q.   Your particular interest is the food hygiene side of
    21        things?
    22        A.  Well, it was a personal interest, really, to see how
    23        the facility operates and to what standards it operates.
    24        So, food hygiene, the actual methods -- right the way
    25        across the board really.

    27   Q.   Did that include welfare?
    28        A.  That would have been part of it, yes.

    30   MR. JUSTICE BELL:  If you had gone in, whatever your own applied
    31        viewpoint might be, and seen anything which you thought you
    32        could improve, would you have felt restricted by the fact
    33        that you are in the post you are in?
    34        A.  Sorry?

    36   Q.   If you go and look anywhere out of interest and you have a
    37        good idea, do you feel restricted by your particular post
    38        to only commenting on what is strictly within your purview
    39        or not?
    40        A.  No.  I was accompanied by a representative of McKey's
    41        and also a representative of the abattoir.  So -----

    43   Q.   It is in case the Defendants wish to ask you any question,
    44        you observed whatever you could observe?
    45        A.  Yes.  Yes, I was not restricted any access to any
    46        areas.  All the questions that I would have asked would
    47        have been answered.  That is it really.  Any records
    48        I would wanted to have seen would have been shown to me
    49        because I was with a representative of McKey's.

    51   MS. STEEL:   Do you know anything about slaughter or much about 
    52        the slaughter? 
    53        A.  I know what I -- I know a little bit about it, what
    54        I have learnt and what I have read and what I have seen.

    56   Q.   What you have observed when you have been to Midland Meat?
    57        A.  Through observing what I have seen at the Midland Meat,
    58        yes, that is one way.
