1 Q. We have heard something of these jobs as the case has gone
2 on but, from your personal experience, what was actually --
3 say briefly -- involved in that job?
4 A. As a Second Assistant Manager?

6 Q. Yes.
7 A. Primarily, I was shift running, but some of my other
8 responsibilities would have been the training of some of
9 the newer staff, and I would have done performance reviews
10 as well for, perhaps, some of the less experienced, shall
11 we call them. Generally, the Restaurant Manager would do
12 the more senior crew members, so I would get a first taste
13 of performance reviews and training by some of the more
14 junior staff.

16 Q. So you say shift running, training and performance review
17 for the more junior people. Did that involve then
18 interaction with the crew on a day by day basis?
19 A. Absolutely. I mean, it was part of my job
20 responsibilities as running shifts, but more immediately
21 with being involved with training and performance reviews,
22 especially training, then obviously I would need to work
23 fairly closely with the crew.

25 Q. Were you satisfied that the training that you were giving
26 was well suited to the tasks that the crew were required to
27 do?
28 A. Oh, it is a very good system.

30 Q. When it came to performance review, did you yourself
31 actually recommend any pay increases?
32 A. Oh, absolutely. I mean, we would probably discuss the
33 forthcoming reviews at the weekly Managers' meeting. Then,
34 for those, I suppose, members of staff that I was
35 responsible for, I would give an over view of how I was
36 intending to carry out the review, what I was going to say
37 basically.

39 In fact, in many cases I may well have completed a view
40 ready just for the Restaurant Manager to have a look at, to
41 make sure he or, in Nottingham's case, she was satisfied
42 with what I had said or had written.

44 Q. You were at Nottingham, as you say, as a Second Assistant
45 Manager, what sort of store was that? Is that a city?
46 A. Well, that was the first restaurant that we had in the
47 city centre of Nottingham and it was very busy.

49 Q. It was very busy?
50 A. Absolutely.

52 Q. You obviously did not remain there; where did you go next?
53 I think we are now at August 1984?
54 A. In August 1984 I went down to Worcester to open that
55 restaurant, open that restaurant.

57 Q. So that was a new store?
58 A. That is right.
