1 Q. Did a Trainee Manager get paid overtime for the hours that

3 A. They were paid a salary.

5 Q. Does that mean they did not get paid for any overtime?
6 A. No, they did not get paid.

8 Q. They did not. How many hours a week did they work usually?
9 A. Five days at eight, so 40 odd hours probably.

11 Q. 40 hours a week. In order to get the same amount or
12 roughly the same amount as them, nearly the same amount as
13 them, the Floor Manager would have to work 50 hours a week?
14 A. Well, I do sort of recall that the thing in my mind was
15 that if Floor Managers did work too many hours -- I cannot
16 remember the rates of pay they were on -- but certainly
17 I was certainly sensitive to the fact that if a Floor
18 Manager's rate of pay was high enough, which could be twice
19 as much as the starting rate, depending on their experience
20 and pay rewards, and again given they tended to be the best
21 people because that is how they get to Floor Manager, they
22 would probably receive the better pay rises.

24 There was certainly a sensitivity in my mind to ensure that
25 their hours or their pay, I should say, did not mean that
26 -- the Trainee Manager did not feel like the position had
27 any worth.

29 Q. So you wanted to ensure that the Trainee Manager did get
30 more than the Floor Manager?
31 A. Well, to a degree then, yes, I suppose, if you put it
32 that way.

34 Q. How long would it take before somebody could become a Floor
35 Manager if they started as a crew person?
36 A. I think it was based on age, but I will be guided on
37 that one. I think -- I cannot even hazard a guess, but
38 I am pretty sure they would have to be over a certain age.

40 Q. If they were over a certain age, what would be the fastest
41 they could progress to being a Floor Manager?
42 A. It is not as straightforward as that. In terms of
43 their experience in the restaurant, I think I can probably
44 recall, in my experience, people who have started as crew
45 part-time during holidays, become full-time and then maybe
46 within six months, perhaps, becoming Floor Managers.

48 It is down to the individual ability. I do not think, as
49 far as I am aware -- again I will be guided on this one --
50 there is any separate policy that people have to work X
51 number of months or years with us before -- I am pretty
52 sure the only requirement was one of age, perhaps, but
53 again I am willing to be guided on that.

55 Q. To get to Floor Manager, would somebody have to go through
56 either being in the training squad or something like that
57 on the way to being a Floor Manager?
