Day 152 - 11 Jul 95 - Page 31

  Q. You are responsible for maintenance and repair of the
       equipment?
       A. Certainly, yes, if anything is broke or needed fixing,
then that would be either mine or my job to ensure that an
Assistant either called an engineer or fixed the equipment.

  Q. Are you responsible for hiring and firing people?
       A. Certainly, yes.

  Q. Are you responsible for seeing that people get their
       performance reviews?
       A. Yes.

  Q. Are you responsible for authorising or giving pay rises?
       A. Yes. We would normally discuss any pay rises and
performance reviews at a weekly Managers' meeting, and
I would oversee that there was a consistency and they were
calibrated so it was fair across the board.

  Q. A weekly managers' meeting, you mean that is an internal
       thing, you and your Assistants?
       A. Yes, the management team of the restaurant.

  Q. Would the performance reviews, whether they were pay
related or not, sometimes be conducted by somebody other
       than yourself?
       A. Yes.

  Q. How junior could you be to do a performance review?
       A. As I remember it, either myself or the First Assistant
would do the performance reviews; in some instances, the
Second Assistants would also do the review.

  Q. To what extent would you find that you needed to refer your
running of your business in the restaurant upwards to the
       Area Supervisor or above?
       A. I would probably talk with the Area Supervisor on a
daily basis, to let him know what was going on. If there
was a problem that I needed advice on, then I would refer
to the Supervisor and he would come in possibly twice a
week, sometimes more, to either train Managers or advise me
on the running of the business.

  Q. In those days that was Mr. Stanton?
       A. That is correct, yes.

  Q. You took over the restaurants which he had supervised,
Colchester, Clacton and Ipswich as well, I think; is that
       right?
       A. Yes.

  Q. How often do you visit your stores when you were an Area
       Supervisor?
       A. Once or twice a week.

  Q. Have been in court while Mr. Stanton has been describing
the duties of an Area Supervisor over these last three
       days?
       A. Yes.
