     2        Restaurant Manager.  I had a very open door policy.

     4   Q.   I am going to ask you now about the age profile of your
     5        crew, roughly speaking, during your time at Seven Sisters.
     6        What proportion of them do you think from memory would have
     7        been under 18?
     8        A.  No more than 10 per cent.

    10   Q.   That means that 90 per cent or more were over 18?
    11        A.  Yes.

    13   Q.   Therefore, you correct me if I am wrong about this, there
    14        will have been a good number of them who were about the
    15        same age as you were?
    16        A.  Yes, I had quite a few people that were actually older
    17        than me.

    19   Q.   I was wondering how many people there would have been; you
    20        were 20, I think, when you started.  I think I have that
    21        right.  You were there for two and a bit years.  What sort
    22        of proportion of crew would have been over 21?
    23        A.  I would say getting on 20/30 per cent, something like
    24        that.

    26   Q.   Did you find yourself at any disadvantage dealing with
    27        people who were older than you?
    28        A.  None whatsoever.

    30   Q.   Was it an advantage, disadvantage, or is it a neutral
    31        thing, that a high proportion of the crew were roughly the
    32        same age as you were?
    33        A.  I think it was an advantage.  They could relate to me
    34        more.

    36   Q.   Did you personally go out on social occasions with the
    37        crew?
    38        A.  Quite often, yes.

    40   Q.   What sorts of things?
    41        A.  Just things like bowling, football, even just going to
    42        the pub for a drink, restaurants.

    44   Q.   Again, I only want a rough idea, from what sort of area or
    45        areas of London did most of the people come that worked for
    46        you?
    47        A.  I had a mixture of two things.  Maybe half worked from
    48        the local area, and the other half, just down the road from
    49        Seven Sisters there was a polytechnic, so I had quite a few
    50        students from that polytechnic that were working for me.

    52   Q.   Would any of those students be full-timers? 
    53        A.  Sometimes, it depends on their courses.  If they had,
    54        like, two hour placements at the end of a day, then they
    55        would work maybe early morning until 2, 3 o'clock.

    57   Q.   If we take full-timers to mean people who work 39 hours or
    58        sometimes more, can you give us an idea what the
    59        proportions were between full-timers and part-timers?
    60        A.  I would say there was probably about -- one side
