     1        staff in.  Failing that, I would ask my Area Manager to
     2        help me to get some staff in, and most, well, nearly every
     3        time that would happen.

     5   Q.   Did it occasionally happen that you had to struggle along
     6        with one or two people short?
     7        A.  Sometimes, yes -- very rarely though.

     9   Q.   Did you ever say to anybody:  "Well, I am sorry, I know you
    10        are scheduled to end now but, in fact, you have to stay on,
    11        otherwise I cannot keep going"?
    12        A.  No.

    14   Q.   Were there times when you would have to say somebody:
    15        "Look, we are a bit stuck; would you mind staying on?"
    16        A.  Yes, I would ask.

    18   Q.   If people were transferred to your restaurant, or I suppose
    19        sometimes you sent people elsewhere in an emergency, did
    20        you?
    21        A.  Yes, you might have the Area Manager ringing me up.

    23   Q.   Were they expected to pay for their own transport?
    24        A.  No.

    26   Q.   How was that done?
    27        A.  Basically, it would be done through the store's petty
    28        cash.

    30   Q.   They would get a bus or taxi or whatever?
    31        A.  Whatever was convenient for them.

    33   Q.   We call full-timers people who work 39 hours -- I think you
    34        told us they would be about maybe 30 per cent -- do you
    35        know how often, can you remember how often, if ever, people
    36        worked more than 39 hours in a week?
    37        A.  I could not put a number on it but sometimes it did
    38        happen, yes.  In the scenario that I just explained to you
    39        regarding being short, I had such a good atmosphere in the
    40        restaurant that staff that maybe were supposed to finish at
    41        6 o'clock, they would actually come up to me and
    42        say: "Could I please help tonight?" to help us out.

    44   Q.   Did you ever find people working what I call double or
    45        back-to-back shifts, in other words, an 8-hour shift,
    46        perhaps a break, then another 8-hour shift?
    47        A.  It would not be a double shift in that sense.  If say,
    48        for example, someone is working 12.00 until 6.00, because
    49        we closed at 11.00, if they wanted to work in the evening
    50        and the Manager needed people, that person would work until 
    51        11 o'clock maximum.

    53   Q.   So you get the 6-hour shift followed by a 5-hour shift?
    54        A.  That is correct.

    56   Q.   How often did that happen?
    57        A.  Very rarely.

    59   Q.   In what circumstances did people do that, because they were
    60        told by you or because they wanted to?
