     1        As far as I am aware, the World Health Organisation and
     2        Food and Agriculture Organisation maintain the same
     3        position with regard to the need to reduce total fat,
     4        particularly saturated fat in the diet to prevent heart
     5        disease.  It is also believed that this action will have a
     6        common effect on the common cancers, especially of the
     7        colon.

     9        1.1.  Anti-oxidants strengthens the evidence:
    10        There has been increasing evidence on anti-oxidants in
    11        relation to protection against blood vessel disease.  This
    12        evidence has led to several reporters to make strong claims
    13        for lack of dietary anti-oxidant as a cause of heart
    14        disease.  These claims need to be seen in their context of
    15        food.  That is, the food sources that provide the richest
    16        sources of polyunsaturated fatty acids known to protect
    17        against heart disease are the richest in anti-oxidants.

    19        These protective foods are ipso facto, low in saturated
    20        fats.  The richest sources of saturated fats are the fats
    21        from ruminant, land animals and are conversely the poorest
    22        sources of both polyunsaturated fats and anti-oxidants.
    23        Polyunsaturated fatty acids are used to build cell
    24        membranes and for their integrity.  Saturated fats and
    25        trans isomers (trans fatty acids) can interfere with this
    26        process.  A major function of the anti-oxidants is to
    27        protect the polyunsaturated fats in the cell membranes.
    28        Lack of integrity of the cells lining the circulations
    29        encourages the adhesion of blood cells."
