Day 269 - 25 Jun 96 - Page 04
As far as I am aware, the World Health Organisation and
Food and Agriculture Organisation maintain the same
position with regard to the need to reduce total fat,
particularly saturated fat in the diet to prevent heart
disease. It is also believed that this action will have a
common effect on the common cancers, especially of the
colon.

1.1. Anti-oxidants strengthens the evidence:
There has been increasing evidence on anti-oxidants in
relation to protection against blood vessel disease. This
evidence has led to several reporters to make strong claims
for lack of dietary anti-oxidant as a cause of heart
disease. These claims need to be seen in their context of
food. That is, the food sources that provide the richest
sources of polyunsaturated fatty acids known to protect
against heart disease are the richest in anti-oxidants.

These protective foods are ipso facto, low in saturated
fats. The richest sources of saturated fats are the fats
from ruminant, land animals and are conversely the poorest
sources of both polyunsaturated fats and anti-oxidants.
Polyunsaturated fatty acids are used to build cell
membranes and for their integrity. Saturated fats and
trans isomers (trans fatty acids) can interfere with this
process. A major function of the anti-oxidants is to
protect the polyunsaturated fats in the cell membranes.
Lack of integrity of the cells lining the circulations
encourages the adhesion of blood cells."

MR. JUSTICE BELL: Now, where have you gone?

MS. STEEL: To the top of the next page. Actually it should
be "encourages the adhesion of blood cells to the walls".

MR. JUSTICE BELL: I have been given mine in the wrong order.
A. I think I have got mine in the wrong order too.

MR. JUSTICE BELL: I mean, it is correct that it goes to where
Miss Steel has gone, is it?
A. If so, my Lord, I was a little bit puzzled because
Miss Steel has given me something which I think is in the
wrong order.

MR. MORRIS: It is probably my fault.

MR. JUSTICE BELL: It does make sense if it goes the way Miss
Steel has gone?

MS. STEEL: I know I put mine in the order of the numbered
paragraphs. I know mine is in the right order.

MR. JUSTICE BELL: Where does the page which starts "and cell
adhesion" go then, the page with Dr. Arnott's evidence?

MS. STEEL: Yes, it is the second to last page of typing.
A. Yes, that is right.

MS. STEEL: Have you got it?
A. Yes, I am all right now.
