Day 269 - 25 Jun 96 - Page 03
MR. JUSTICE BELL: Good morning. Welcome back.
A. Thank you.

Q. You remember what I said. There is no need for Professor
Crawford to be sworn again or affirm again. I do not know
how long you will be in the witness box, Professor
Crawford. If you want to sit down, pull the chair
forward. I cannot remember what you did last time. Keep
your voice up if you sit down because the microphone does
not amplify your voice. It just puts it on tape.
A. Right. Is that a clear enough speaking voice?

Q. Yes, absolutely.
A. Good.

MS. STEEL: Have you got a copy of your statement in front of
you?
A. Yes, I have.

Q. I am just going to read through your statement and if there
is anything that you want to clarify or there is anything
that needs correcting, if you stop me at the end of the
paragraph.

MR. JUSTICE BELL: Yes.

MS. STEEL: "Professor Michael Crawford. Recent events.
Personal position: Since I last gave evidence there have
been two personal events:
(i) in August 1995 I was presented with the International
Award for Modern Nutrition for my work on polyunsaturated
fats.
(ii) I was elected to the Fellowship of the Royal College
of Pathologists in recognition of my published work."

MR. MORRIS: Can I just ask, do the stenographers have a copy of
the statement?

MR. JUSTICE BELL: Sorry?

MR. MORRIS: I will give a copy to the stenographers because
there is a lot of quite complicated words.

MS. STEEL: "The changing perspectives in diet, heart disease and
cancer.
1.0 Scientific Evidence:
Since submitting my first contribution, it is my view that
the evidence relating diet to heart disease and cancer has
hardened. The evidence of saturated fats is the most
researched component of the cause of heart disease.
Despite energetic challenges, it has stood the test of time
for the best part of half a century. Because of the
exhaustive nature of the work on saturated fats, the more
recent studies have focused on other aspects of the diet
such as the protective agents to provide a fuller
explanation for the major cause of mortality in Western
countries. I shall try to summarise this evidence and give
my views on McDonald's contribution to the saturated fat
intakes of Western and developing countries.
