Day 279 - 12 Jul 96 - Page 10

"immediately 50 to 60 per cent of the carcass..."

MR. JUSTICE BELL: Yes, down to?

MS. STEEL: Down to the end of that bit, just above the
photograph. I mean, you would have to separate out the
bits that are actually in quotes and the bits that are
not. But basically all the quotes on those two paragraphs.

  MR. JUSTICE BELL: Yes.

MS. STEEL: Then the next part is the last paragraph on that
page, the quote "'The floors are filthy' says one current
worker" and then the quote, "The line goes by so fast that
you don't have time to throw everything into barrels." And
       down to--

MR. JUSTICE BELL: That is the last line and half on that page
       is it?

MS. STEEL: Yes. Then it goes over to the next page down so far
as "history". Then I think the rest of it is not in quotes
       on that page.

MR. JUSTICE BELL: Where is "history"?

MS. STEEL: It is the third line of the following page, page 36.

MR. JUSTICE BELL: Yes, I see.

MS. STEEL: The next part is the following page, page 37, in the
first column, "I have seen meat from the heads...". The
whole of that quote, and it is a quote made by Steve
Cockerman, an inspector with the US Department of
Agriculture for 14 years. And there is a quote that
follows on from that. Basically, it is the whole of that
paragraph, the whole of the next column is various quotes
from him. Obviously, we are relying on the quotes rather
than the other parts. Then, in fact, the next column is --
in fact, it says in the first full paragraph, "His files
are filled with notation that underline his concerns and
those of other inspectors at the plant." Then there is a
list of his concerns, and you will see at the end, at the
very end of the column, he refers to "Monfort is not as
committed to this programme as all of you think". And he
was a USDA inspector at Monfort. So, really, it is the
very last paragraph of the first column on that page and
then the whole of the second column.

  MR. JUSTICE BELL: Yes.

MS. STEEL: Then there is another quote by him on the following
page talking about lab tests revealing an alarmingly high
count of -- I can't even say the word -- achilleine -- and
then it is a quote from him about that means high
spoilage. The next part, although I am not so sure about
this, it is about testimony submitted to a congressional
hearing by a USDA supervisory veterinary medical officer.
You see that at the bottom of the page is kind of like a
different section which is the article carried on.
