SpamCop offers a free service that is quite handy for beginners.  Once registered, a user can submit spam directly to spam cop, spamcop then dissects the headers and automates complaints to the spammers ISP and Upstream Providers

Spamhaus Project

Spamhaus is a great way to find out where most spam is coming from and who has open relays in their network.  Spamhaus maintains block lists for network administrators so that they can refuse spam before it ever hits your inbox.
