I heard on rgp that Williams first put cows into "Fire" (moo when you put your money in and maybe others) because the Chicago fire, on which the game is based, was supposed to be started by a cow who knocked over something in a barn. So it took off from there - I mean everybody loves cows and mooing. --theo
