A friend of me makes the best Tira mi su I've ever tasted. Here's her recipe:
275 g Mascarpone
125 ml (unsweetened) whip cream
40 g vanilla sugar
2 eggs
175 ml very strong black coffee
100 ml Kahlua liqueur or Tia Maria
18-25 cookies
cacao (for finishing)
1. Whip the Mascarpone, sugar and egg yolks.
2. Beat the egg whites and the whip cream separately and mix them through the Mascarpone mixture.
3. Cover the bottom of a large shallow bowl with a thin layer of this mixture.
4. Mix the liqueur with the coffee and soak the cookies in this mixture. Put a layer of cookies on top of the cream mixture followed by 1/3 of the cream mixture. Make 2 more of these layers.
5. Sprinkle cacao on top of the Tira mi su and cover it with aluminium foil.
