FIG FILLED COOKIES

I%1, cup, figs, ground or finely chopped
I%1/2, cup, water
I%4, T., sugar
I%1 1/2, T., lemon juice

I%1/2, tsp, salt
I%2 1/2, cups, flour
I%1, tsp, baking powder
I%1/2, cup, margarine
I%1, tsp, baking soda, (scant)

R%The first four (4) ingredients are for the fig filling. The
R%remaining seven (7) ingredients are for the cookie dough.
R%
R%Fig Filling:
R%Combine fig filling ingredients and cook slowly, stirring
R%constantly until thickened. Set aside to cool.

R%Cookie Dough:
R%Cream sugar and butter, add egg and then sifted dry ingredients.
R%Roll out on floured board and cut with round cutter. Put one
R%tsp. of filling in center of each round and fold over and
R%lightly press down edges.

R%Note: You can use a thimble to cut out center of half of the
R%rounds and place it on top of whole rounds instead of folding
R%over. This makes a round filled cookie.

R%Place on a greased cookie sheet and bake at 350 degrees for 10
R%to 12 minutes.
