     1        A.  It is the totality of what a person eats -- and
              drinks, for that matter.  Again, as we have already
     2        discussed, in relation, at least in making an assessment
              of the dietary composition of an individual, one would
     3        want to do that over a period of a week, a fortnight, a
              month, not over one day.

         MS. STEEL:  You say a month.  Is it not right that -- well,
     5        I am pretty certain I have read a fair bit saying that one
              of the things that is not good for your health is to have
     6        your weight see-sawing from a high -- that it is more
              healthy to have a fairly stable weight?
     7        A.  I think that is fair comment, but just because the
              diet may vary, at least what one eats in a 24 hour period
     8        may vary from one day to another, that does not
              necessarily mean that your diet is going to see-saw.  I
     9        have a very varied diet but, you know, my weight is pretty
              constant.  I do tend to weigh myself on a regular basis.

         Q.   If, for example, during January you ate lots of food that
    11        was high in fat and a high calorie content, a high sodium
              content, then in February you made sure you did not eat
    12        lots of foods that were high in fat and sodium.  Would
              that actually balance out or would that ----?
    13        A.  Well, in my view, it would not be terribly sensible.
 
    14   Q.   What about from week to week:  If you did that one week
              and the next week you had a lower fat diet?
    15        A.  Who knows?  I think, in reality, people tend to follow
              a fairly standard diet over a period of about a week.  For
    16        example, people probably have a different diet at the
              weekend to what they would have during the week when they
    17        are actually working.  So I think, in practice, if one
              were to take, you know, to look at a total diet in terms
    18        of a week, then I think that would be about right.
 
    19   Q.   You think weekly?
              A.  I would say a week or a fortnight.  If you look at
    20        institutions, they tend to devise their menus over a
              period of a week or a fortnight.

         Q.   On page 9 of your third statement ----?
    22        A.  Can you give me the reference, please?
 
    23   MR. JUSTICE BELL:  It is yellow V.
 
    24   MS. STEEL:   I do not know whether you need to look at it.
              I can read a part out.  You say:  "McDonald's has its own
    25        healthy eating policy which has been published.  See
              attached booklet."  Do you know when that was published? 
    26        A.  Yes, I think it was published about a year ago. 
  
    27   MR. JUSTICE BELL:  When did you start as a consultant?  You may
              have told us yesterday morning?
    28        A.  In 1991.
 
    29   Q.   To McDonald's, 1991?
              A.  That is right.
