2 A. Well, it is half hourly on the travel path.

4 Q. What, the shift manager makes the checks hour hourly?
5 A. He makes, yes, half hourly travel path.

7 Q. Walking all around all these streets that are the route of
8 the trash walk?
9 A. No, he would not complete the complete trash walk. He
10 would check the immediate adjacent areas because he would
11 not -----

13 Q. The ones in sight of the restaurant, the ones that are very
14 close by?
15 A. That is correct, yes.

17 Q. 100 yards of pavement or something like that?
18 A. Yes, it would be mainly Royal Avenue, Wellington Square
19 and the Kings Road. He would not walk all the way down the
20 Royal Avenue but he would check visibly from the store.

22 Q. Stand on the corner and have a look down the street?
23 A. Yes, he would, yes. There is also a diary in which,
24 when the travel, when the trash walk is completed, the
25 dining area host signs a book to say that that trash walk
26 has been completed.

28 Q. How long has that diary been in existence?
29 A. We started using it towards the end of summer last
30 year. It is not a company regulation but we -----

32 Q. So around August 1994 or something like that?
33 A. August or September, I believe, yes.

35 Q. Do any of the other stores that you have been involved in
36 have a diary of this nature?
37 A. In the two other stores I have worked in, no. It is
38 not a company policy, I believe.

40 Q. Was there some reason why you introduced this diary?
41 A. Just as a management tool so that we could call up and
42 check upon the trash walks, and so that someone was
43 responsible and accountable for the trash walks.

45 Q. The shift manager, is that the same as the person in charge
46 of the dining area that you were talking about yesterday?
47 A. No, it is not. Each area in the restaurant, the
48 kitchen, the front counter and the dining area have an area
49 leader. He would generally be a floor manager or dining
50 area host. In overall charge of those three areas would be
51 a shift manager who is the person who would be responsible
52 for the store that day, for that shift.

54 Q. I thought you said yesterday that the dining area manager,
55 or something like that, had the responsibility for ensuring
56 that people went out on the trash walks?
57 A. Yes, they have a responsibility for ensuring people go
58 out. But the shift manager has the responsibility for
59 ensuring that the dining area host is, or manager, is
60 completing his job or her job.
