     1   Q.   Then when does the tea-time kind of rush start?
     2        A.  Well, the dinner time, well, we would possibly be busy
     3        round about 5.00 to 6 o'clock.

     5   Q.   So what about between 3.00 and 5.00?  Is that like a quiet
     6        period of the day as well?
     7        A.  It would be quieter than the lunch and dinner periods,
     8        yes.

    10   Q.   So how many staff would be in the dining area?
    11        A.  It would depend on the day, on the time of the year.

    13   Q.   Say this time of the year for the moment?
    14        A.  On what day?  On a Monday or a Saturday?

    17        A.  On a week day, on Monday through to a Wednesday, it
    18        would probably be about two people.

         A.  Approximately two people.

    26        A.  Sorry, this would not include the host.  Plus the host,
    27        it would be three altogether.

    29   MS. STEEL:  That is between 3.00 and 5.00 in the afternoon,
    30        roughly?
    31        A.  Yes, but on Thursday, Friday, Saturday, the numbers
    32        would increase.

    34   Q.   You are open on Sunday as well?
    35        A.  We are, yes.

    37   Q.   Is that a similar situation to Thursday, Friday and
    38        Saturday?
    39        A.  No, it is a very different sales pattern on Sundays.

    Q.   What, quieter or busier?
    42        A.  The day is busier than Mondays through to Wednesdays,
    43        but the individual hours are on average higher.  It is more
    44        a consistent pattern across the day.

    46   Q.   On weekdays, during busy periods, say, from 12.00 to 3.00,
    47        how many would be in the dining area at that time, say,
    48        Monday to Wednesday, for starters?
    49        A.  It would be three or four people plus the dining area
    50        host.

    52   Q.   So the six people would be Thursday, Friday, Saturday, 
    53        would it, during the busy times?
    54        A.  It would generally just be Saturday.  On Thursday,
    55        Friday, well, it would probably be approximately four or
    56        five.

    58   Q.   In the dining areas what responsibilities would, I do not
    59        know -- does the lobby host join in with the work as well
    60        or are they just supervising?
