1 A. He or she will join in when needed, generally will try
2 to look after the customers, make sure the customers have
3 not got any problems with their meal. They would supervise
4 the area to make sure there is a clean environment, a safe
5 environment, make sure the toilets are stocked up and
6 clean. He would generally be moving around the lobby, the
7 dining area, making sure that everything was meeting
8 McDonald's standards and also the customers were being
9 looked after as well.

11 Q. That is not just the host, that is the person who is
12 working in the dining area as well, the other employees in
13 the dining area?
14 A. The host would be responsible for that but the other
15 staff in the dining area are trying to do this, to give
16 customers customer care. They would maybe responsible

19 Q. And to clean the toilets and to check that they are
20 stocked?
21 A. They would be delegated responsibilities. One may be
22 delegated the responsibility of looking after the men's
23 toilets; somebody after the ladies' toilets; somebody after
24 the bins; somebody to look after the floor, etc.

26 Q. Sorry, I am just trying to get this clear. The people
27 working, the employees working, in the dining area have to
28 do these jobs and the lobby host is responsible for seeing
29 that those employees do do those jobs?
30 A. Yes.

32 Q. If necessary, the host would muck in, as it were?
33 A. Yes, that is correct.

35 Q. If it gets extremely busy in the store is it sometimes the
36 case that the people in the dining areas go and help out
37 behind the counter or on the tills?
38 A. As a rule, no, they would not go behind the front
39 counter.

41 Q. Would they ever?
42 A. They may be moved completely from one area to another
43 but they would not go and help out for a short period of
44 time. They would be responsible for the dining area and
45 they would stay in that area.

47 Q. So if they are put in the dining area they would stay in
48 the dining area all day or what?
49 A. Possibly not all day, may be after the lunch period
50 they may go and help out. They may work in the till area
51 or work in the kitchen area.

53 Q. Do you know roughly what percentage of custom is after
54 6 o'clock in the evening?
55 A. Again it depends on the time of the year and the day
56 because in the summer months we are busier at night time,
57 but I could not give you a percentage off the top of my
58 head, no.
