quickly and efficiently; is that correct?
       A. Yes.

  Q. Generally, crew were expected to hustle all the time they
       were working?
       A. Not all of the time.

  Q. Most of the time then?
       A. Seven Sisters was normally busy 12.00 to 2.00, so two
hours out of however many hours we were open.

  Q. So you particularly wanted them to hustle at times when the
       store was busy?
       A. Yes.

  Q. Have you ever seen a memo from the Company or anything
criticising the hustle or suggesting a change in the hustle
       policy or anything like that?
       A. I think I have come across something recently.

  Q. Recently, what, within the last six or seven months or
       something?
       A. Could be within the last year. I am not too sure.

  Q. Within the last year? Do you remember what it said?
       A. No, I do not.

  Q. Just roughly?
       A. Well, basically that, you know, defining hustle or even
removing the word "hustle" from the terminology that we
use, just for the benefit of all employees for safety
reasons. Something along those lines; I cannot remember
       word for word.

  Q. OK. Was that a memo?
       A. I cannot remember.

  Q. You do not know. What do you know about the incident where
maggots were found in a shake machine in the Seven Sisters
       store?
       A. I do not know anything about it.

  Q. You do not? Do you remember complaints about burgers being
under cooked or, rather, customers bringing them?
       A. Not specifically. In 14 years I have had complaints,
       yes.

  Q. It happens from time to time?
       A. Not as often now as may be it would have happened in
       the past.

  Q. What, since the introduction of the clamshell grill?
       A. That is correct.

  Q. What would you do when a raw burger was brought back or an
       under-cooked burger?
       A. Basically, replace it and then throw the original
burger in the bin, and then basically go to the grill and
find out if there is a problem with the grill; is it the
right temperature; if the correct procedures were being
