     1        A.  Most of them come to Strand restaurant, probably there
     2        is no vacancy close by to where they live, or they do like
     3        to be in that busy restaurant.

     5   MS. STEEL:   Just on the subject of lettuce, if the outer leaves
     6        of the lettuce were brown and soggy but the inner ones
     7        appeared to be OK, what would the crew be instructed to do
     8        in those circumstances?
     9        A.  They would be thrown away.

    11   Q.   The whole of it?
    12        A.  All of it.

    14   MR. JUSTICE BELL:  I thought I heard before that the lettuce was
    15        already separate leaves.  Maybe I have misremembered, but
    16        they did not come as whole lettuces.

    18   MS. STEEL:   Are they already separate leaves?
    19        A.  Separate leaves, yes.

    21   Q.   All right, OK.  You said that lettuce would be thrown away
    22        if it was past the "use by" date.  Did that really happen?
    23        A.  Yes.

    25   Q.   It did?  Do you remember how many times that ever happened?
    26        A.  I cannot recall but, as I said, we get delivery every
    27        single day.  It does not happen that often, because we get
    28        only daily usage; we only order for a day usage.  So it did
    29        not happen that often but, if we come across out of date,
    30        we throw them away.

    32   Q.   Has that been the situation at all the stores you have
    33        worked in?
    34        A.  That is correct.

    36   Q.   What is that:  something like once a week, once a month,
    37        once every three months?
    38        A.  I would say once every three months, in the Strand.

    41        A.  In the Strand.

    43   Q.   When the lettuce is delivered, what is its shelf life?
    44        A.  Seven days.

    49   Q.   If a crew member dropped a tray of buns, would it be left
    50        there or would the crew be told to be more careful and get 
    51        told off? 
    52        A.  It would be thrown away, and just find out the cause of 
    53        it, what is causing it.

    55   Q.   If it was just -- well, provided it was not
    56        deliberate -----
    57        A.  Just show them again how to do it and provide them with
    58        the right thing.  I mean, if they miss out where to place
    59        it, just show them.
